Potatoes – 4
Onions – 1 big (sliced)
Ginger – 1 inch chopped
Green chillies – 2 slit
Turmeric powder – 0.5 tsp
Chilly Powder – 0.5 tsp
Besan – 2 tsps
Mustard – 1 tsp
Channa Dal – 2 tsps
Oil – 2 tsps
Curry leaves – 5 to 6
Lemon juice – 2 tsps
Coriander leaves (chopped) for garnishing
Salt as per taste
First boil potatoes in cooker for 2 whistles. Once done, peel and cut them into cubes and keep it ready.
Mix the besan with some water and make it a thin paste and keep it aside.
In a hot kadai add oil, mustard seeds and channa dal. Once mustard splutters add onion, green chillies and ginger and sauté till onion turns translucent. Now add chopped Potatoes, salt, turmeric powder and chilly powder and mix it well.
Now pour the besan mixture and keep stirring till it starts thickening. Keep the flame low and mash the potatoes if required.
Switch off the stove and garnish it with lemon juice and coriander leaves.

Anyways today I will be sharing a very simple rajma recipe. If you have no veggies at home then this is a perfect side dish for roti or rice.. I personally love to eat it with rice. It’s a very easy yet tasty recipe.
Serves : 4
Prep time: 10 mins
Cooking time : 20 minutes
Rajma – 200 grams (Soaked overnight)
Onion – 2 (Chopped finely)
Tomatoes – 2 (Chopped finely)
Ginger garlic paste – 1 tsp
Chilly powder – 1 tsp
Garam masala – 1/2 tsp (Optional)
Salt as per taste
Coriander leaves for garnishing
Cinnamon stick – 1 inch
Bay leaf – 1
Jeera – 1 tsp
Oil/butter – 2 tsp
Wash rajma thoroughly. Add five cups of water and soak it atleast for 8 hours or overnight. Rajma will double in size.
Drain the water from soaked rajma, wash it and add 2 cups of water. Add salt and pressure cook for 10 whistles. Rajma should become soft. Keep it aside.
Take a kadai add oil/butter. Now add jeera, cinnamon stick and bay leaf and saute. Add onion and ginger garlic paste and fry for a minute. Now add tomatoes and sauté till they become mushy. Add salt just for the onion and tomato masala as we have already added salt in rajma.
Now add the rajma along with the cooking liquor. Add chilly powder and garam masala. Cover and cook for 15 minutes in low flame so that rajma absorbs the masala. Now garnish it with fresh chopped coriander leaves.
Yummy rajma is ready.. Serve hot with roti, paratha or rice.
Method: Boil rice in four cups of salted boiling water or pressure cook for 3 whistles.
In a pan heat oil and add onions and saute till golden brown. Then add all the veggies.
Sprinkle salt, cover and cook on medium heat for two minutes. Add the ground mixture along with garam masala to the vegetables. Add little water and cover and cook for two minutes. Add turmeric powder, red chilli powder and coriander powder and cook.. Simmer for two minutes till the vegetables get cooked. Take a deep bowl.
Arrange a layer of rice at the bottom. Over that arrange cooked vegetables followed by another layer of rice. Whisk yogurt with rose water and saffron. Sprinkle half the coriander leaves, half the mint leaves and half the yogurt mixture. Arrange the remaining vegetables followed by the remaining rice. Sprinkle the remaining coriander leaves, remaining mint leaves and the remaining yogurt mixture.
